We love a quick and easy recipe that we may serve as an appetizer with cocktails. Our “Awesome Olives” deliver a tasty punch of complex flavors that we will guarantee to make your guests giddy. Try making these for your next soiree—you’ll be amazed at how easy to prepare and swoon-worthy these taste.
Mix a pint of your favorite olives from your local olive bar. We use a mix of Moroccan salt cured black olives, green olives, tiny peppers, roasted garlic, etc. We like to make sure that whatever olives we select has a broad range of size and colors.
In a zip lock bag, put:
One tablespoon of balsamic vinegar
Juice of one orange
Zest of one orange (we peel ours with a knife to make one continuous spiral)
Two bay leaves
Two star anise
One cinnamon stick
Five juniper berries
Three dried Thai red chili peppers
Three sprigs of fresh thyme
Pint of olives (see above)
Olive oil (about 1/4 cup)
Zip bag and swish around contents every few hours. We find these need at least four hours to marinate; preferably 24 hours for a more intense flavor profile. Before serving, drain contents in a colander and pull out old thyme sprigs and replace with fresh. Place contents in a pretty bowl. Watch your friends try one, declare a loud expletive, and devour them all. You will not have any leftovers!
