Clam Dip & Chips Redux

We remember our Gaga and Granddad hosting fabulous cocktail parties with guests swaying to the rhythms of Herb Alpert & the Tijuana Brass while sipping martinis and nibbling on appetizers that included dip & chips. And with the final season of Mad Men premiering on April 5th, we’re eager to host a 1970’s themed cocktail party with a nostalgic menu rivaling our grandparent’s appetizer spread which always included Clam Dip & Chips.

2-8oz packages of Cream Cheese at room temperature
1/2 cup Mayonaise
1-6oz can of Minced Clams, drained reserving 2 tbsp of clam juice
1 tsp of Worcestershire Sauce
1/2 tsp of Garlic Powder
1/8 tsp of Cayenne Pepper
1/8 tsp of White Pepper
1 tbsp freshly squeezed lemon juice
Salt to taste (scant salt as the chips are already salty)

Cream together mayonnaise and cream cheese.
Add drained minced clams with two tablespoons of the reserved clam juice. Mix in lemon juice, garlic powder, cayenne pepper, white pepper, and a pinch of salt. Mix well.
Add Worcestershire Sauce and mix well. Test for salt, pepper, acidity, etc. Make adjustments to existing ingredients as necessary.
Present clam dip in bowl or ramekin garnished with fresh herbs. Plate with kettle potato chips and serve.

We prefer our favorite brand of kettle chips as they don’t break as easily as traditional potato chips. Enjoy!
